四喜丸子

四喜丸子是一道经典的中式菜肴,不仅适合过年时享用,而且还能展现出高档的气质。以下是制作四喜丸子的步骤:

1.将绞好的肉馅、莲藕和胡萝卜碎混合在一起,加入生抽、蚝油、料酒、盐、鸡精、白糖、十三香等调料,搅拌均匀。

2.加入葱姜水和鸡蛋,再次搅拌均匀。

3.加入淀粉,再次搅拌均匀。

4.将搅拌好的肉馅分成四等份,每一份用手团成一个大丸子。

5.将团好的丸子放在抹油的盘中。

6.锅中烧油,油温6成热下上大丸子,一定要小火慢慢的炸,炸至定型以后稍微翻动一下,炸至外面焦黄,里边还不熟就捞出来,因为太大了肯定炸不熟。

7.锅中烧油,放上葱、姜、八角爆香,然后放上一点料酒、一点生抽、一点蚝油,倒上水放上一点盐,水开放上丸子,大火烧开以后盖盖煮20分钟。

8.烫好的青菜把煮熟的丸子捞出来,汤汁再放上一点蒜末,用淀粉水勾芡几次,再放上一点老抽上上色,放上一点食油增亮。

9.料汁调好了,直接倒到煮好的丸子上。
